Sashimi

Sashimi is a Japanese delicacy consist of very fresh raw seafood that are sliced into thin pieces and served with a dipping sauce consist of soy sauce and wasabi paste as well as sliced ginger root or gari and ponzu.

Sashimi means pierced body and the name could came from the traditional method of harvesting when a sashimi grade fish is caught and kill it instantly with a sharp knife piercing through the brain of the fish.

This process is known as the ike jime process. Ike jime process will prevent the fish from dying slowly and can keep for about 10 days without turning white with ice covered.
